Apple Pie with Cheddar Crust. Those little brown freckles are the little pieces of cheese in the crust.

Kerrygold has been kind enough to supply butter to my workshops over the past year or so, but even if they didn’t, I would still be using it and for many years I did just that. So, when they asked if I might be interested in baking up a little something with their cheese, I jumped at the chance!

I had been thinking about using cheddar cheese for a crust and with the Fall apple harvest, the timing couldn’t have been more perfect for me to create and then write about the Apple Pie with Irish Cheddar Crust that I made with Kerrygold cheese and butter which I love, Love LOVE!  I swear I see leprechauns leaping and dancing around my kitchen when I bake with it.  What about you?

I had a bit of cheese left so in it went to the pie filling.

And, now, I really must start packing as Art of the Pie heads to DC bright and early in the morning for three sold-out workshops this weekend!
