Bibliography

I had the good fortune to have a pie-making grandmother to show me how to make pie, but I continue to learn from bakers and cooks, both home and professional, and from authors who have written about baking. In the pages just before the bibliography of French Provincial Cooking, Elizabeth David writes, “There are people who hold that cookery books are unnecessary.” Whether slender spiral-bound church cookbooks that I find at yard sales and thrift stores, the volumes that accompany me home from the stacks at my local branch of the North Olympic Library System (a big thank you to Benjamin Franklin, who, in 1731, founded the first free lending library in Philadelphia), and baking and cooking books that find their way onto my shelves, even if it is one small tidbit, there is always something I learn from them.

Like my dear friend, Leigh Olson, who champions the home cook at The Heritage Cookbook Project, when I am holding a box of well-worn and stained 3- by- 5- inch index cards with handwritten recipes, I am holding a family history, for as Leigh says, “Every recipe has a story to tell.” So does every pie.
