Refreshing a Pie
Here’s a quick little tip to help with big meal preparations during the busy holiday season. Pre-make and bake your fruit pies a day before the big gathering so that when the kitchen is buzzing with all the preparations that inevitably take place for a big meal, you won’t have to worry about making the pies. To get that just baked texture in the crust once again refreshing a pie is all you need to do a few minutes before you wish to serve it.
To refresh a pie, preheat the oven to 325F and then pop it in for 15 to 20 minutes. Even ten minutes will work. While your fruit pie is refreshing, get the ice cream out of the freezer, whip the cream, set out the plates and forks you will be serving onto, and don’t forget the pie server. When the pie is ready, your guests will be, too!

thank you so much for your “refresh” tips. Just what I need, since I bake apple pies very often. Since I use a sour cream and egg yolk mixture instead of plain ice water in the pie dough, my pies are the best in town, with a perfect yummy golden crust. For the last few pieces left to serve, your refreshing suggestions are just right!
you specifically mention “friut” pie” in the tip. Will this work for pumpkin as well, since it’s more of a custard?

I think you would be safe to make it a few days in advance, chill it, and then reheat at 325F for 10-15 minutes.

It will be safe overnight. No eggs in it.
