Sausage and Spinach Pie
A couple of weeks ago I was searching in the three editions of the Joy of Cooking I have (which my mom and Geeg simply called Rombauer) for drawings of squirrels. Apparently if you have the editions that have the legendary squirrel drawings, you have somewhat of a collector’s item. Hmmm…not sure about that because only two of mine have the drawings in it…
…but my oldest edition from 1946 does not. I would have thought for sure that the oldest edition would have included it but what do I know! I bet some of you are running to your cookbooks right now to see what edition you have and if the squirrel…and rabbit…are in there. What you probably won’t find is this clipping which fell out of the 1946 edition when I was looking through it. Who knows how long it’s been in there.
It is really similar to the Italian Nettle and Sausage Pie which I created with Langdon Cook and included in my book. Since Mrs. C’s uses spinach and the nettles can easily be swapped out with spinach, I think it just might be time to make one. If you don’t have the book for the recipe, here’s a link to Langdon’s blog where the recipe is and you can read all about the day we created our version!
My copy of Joy of Cooking does have the rabbit drawing! Now I know what to do if we ever catch a rabbit – LOL!
Indeed you will Diane…we both will! By the way, I did make a great Hare Pie using Theresa Carle-Sanders recipe from her Outlander Cookbook recently. It was great. I wrote about it here.
The newspaper clipping that fell out your cookbook came from a magazine, I’m guessing it was “Better Homes and Gardens” from the late 1970’s, early 80’s. I had that magazine and made this pie all those years ago, from that very same recipe. I wanted to make it again but couldn’t find the recipe so I took a chance on a Google search. All I could remember was “Mrs. C’s Sausage and Spinach Pie.” Imagine my surprise to see it again! I hope I find my original so I can post the picture of the pie from the magazine. The splendor of that pie made me want to make it.
Kathleen- This is wonderful. I’m delighted that you are able to make it again!
