Humble Pie
A wonderful collection of essays on pie.
Pie: A Global History
Janet Clarkson has written an history of pie in the English speaking world. It’s a fascinating and full of well researched information.
Pie Every Day
Another lovely book of essays and recipes.
PIE PANS
Staub
I love the handles on this pan.
Emile Henry
Made in France
A classic.
Ruffly edge.
Le Creuset
Mini 5″ pans.
OXO
I no longer recommend Pyrex for new purchases as they changed their formula and I have experienced shattering and exploding with the new formula. OXO’s glass bakeware is made from borosilicate glass, the stuff that Pyrex used to be made from. Borosilicate glass is thermal-shock resistant, so dishes can go from the freezer to a pre-heated oven, or be placed on a counter to cool without worrying about cracking or shattering.
Pi Plate
Pie-fect for Pi Day (3.14)
Tart Pan
Baking Dishes
ROLLING PIN
Fletchers’ Mill
This is my favorite rolling pin and the one that I use at workshops and camps.
It is also available directly from Fletcher’s Mill as are many other pins they make.
BOWLS
PASTRY CLOTH
I find rolling with a pastry cloth a breeze. This one also comes with a rolling pin sock.
CANNING JARS
SAUCEPANS
An investment in Demeyere cookware fits my motto of “buy once, buy the best.”
SCRAPER, GRATERS, PITTERS, JUICERS & ZESTERS
OXO
Great cleaning off counters and cutting through dough.
Microplane
I use both of these for grating nutmeg.
Cherry Pitters
An important piece of equipment when pitting cherries, although a paper clip or an eraser work well, too.
Juicer
This is a nifty juicer for lemons, limes, and oranges.
DRIP PAN & THINGS TO USE FOR COOLING RACKS
This makes clean up really easy.
Canning Rack
Perfect for cooling pies and the handles make it easy to move them around.
Oven Gloves
My fingers don’t burn and I get a lot of dexterity with these gloves.
Cooling Rack
A classic cooling rack.
Sheet Pans
Sheet Pan Liners
I use these instead of parchment paper. Much less expensive and I can line my pans and catch drip, too.
KNIVES
J.A. Henckels
A favorite can do just about everything knife.
Amco
A mezzaluna is fast becoming my favorite way to cut fats into the dough.
LASER THERMOMETER
A nifty way to check the temperature of oven, butter, lard, fridge, freezer, and even your hands.
MEASURING EQUIPMENT
PIE SERVER
OXO
Serrated on both sides for lefties and righties.
PIE DECORATING STUFF
Decorating Stand
A decorating stand makes finishing edges with flutes and scallops so easy.
